I was back in action tonight in the kitchen with this meal. I made us Tilapia with Mediterranean pasta. The pasta was whole wheat with lightly sauted garlic, roasted red peppers, and artichokes. Yummy!
It was good to be able to cook a meal for my husband again, although it will be short lived because I will be headed out of town again.
Tomorrow night is burgers, but I'm not sure what else. Any suggestions?
