Tonight's meal was vegetarian, filling, and tasty.
Here's the rundown:
Whole-wheat wrap with roasted red pepper hummus, sauteed portobello, and spinach. A serving of tabouli with black beans, and Matt's homemade crackers with hummus for dipping. It was quick, easy, and made for a nice picture.

Since we're in week 5 I think we all need a little encouragement. I found Willie's quote today and thought it was really appropriate to how we're progressing. I know I've gotten caught up in trying to make sure I'm consistent everyday that I run. In my head I feel that I need to keep a specific speed the whole time. This makes it easy to get down or disappointed when I need to take longer and slow down.
This last Sunday during the 5 mile run, I kept repeating to myself- 'Keep it up girl, you can do it.' Sometimes I think we all need a little bit of encouragement from ourselves.
Today however I got some encouragement from Sabrina, and it is a good thing because I needed it. Earlier today I was thinking I'd reduce or eliminate my run, but then Sabrina sent me an email saying I was doing so good with my running. So that made me feel like slacking was no longer an option- so I ran three miles! Thanks for the support Sabrina! I made it and I feel great!
