Makin' it up as I go along...
Well I do try to have a plan going into the week, but it always seems that when I get into the meal prepartion during the week I change my mind or I'm craving something else.
Tonight's meal started with a wrap, and then I layered on greek yogurt, black olives, jalepanos, mixed greens, and salsa. After I added on a chopped up black bean burger, and wrapped it all up. Served it up with a side of simple bean salad.
Next up was working on my oatmeal & egg white cookies. Tonight I used measuring cups, so that you could try it too!
Here's the list:
2/3 cup oats
1/3 cup of egg whites (or 2 large egg whites)
2 tsp cinnamon
1/4 cup of raisins
1 square chopped dark chocolate (optional)
Mix it all together, and bake at 350 for 10 minutes. Viola! It's that easy. If I can do it with my toaster oven, you can too! Try it out and let me know if you like it.

And I know a few of you reading this are vegan or even try to stick with the raw food movement, so up next I will work on a version with vegan "egg white". Doesn't that sound fun?
